The ingredients include bitter melon, carrot, some Vietnamese pickled leek, some chilli, mint and coriander To make vegetarian mock dried fish, you need 4 tubes tofu skin, 4 cubes fermented bean curd and 2 tbsp wheat flour Some roasted peanuts to add crunchy texture To make salad dressing, you’ll need soy sauce, sugar and Knorr mushroom seasoning powder Soak tofu skin in warm water to soften Mash 4 cubes of fermented bean curd in a small bowl Add 1 tsp sugar Stir it well until you get a thick mixture like this When the tofu skin is soften, drain and use a towel to absorb the water Spread the paste on the tofu skin and then deep-fry until golde brown Remove from oil and drain Then cut into strips listen to that crispy sound! Remove bitter melon’s seeds and thinly slice Similarly with carrot, you also trim as flower shape and thinly slice Mix bitter melon and carrot in a large bowl Add some salt and toss well The sauce includes 1 tsp soy sauce 1 tsp sugar 1 tsp Knorr mushroom seasoning Mix well until dissolved After salting 15 mins, there will much water released This step makes bitter melon crunchier Rinse well and drain Put bitter melon and carrot in a mixing bowl Then add dressing and toss well Add mint, fried tofu skin, pickled small leek and roasted peanuts This vegetarian dish looks so yummy! Next, we will make Bean stew with coconut Lima beans can be mostly found in spring and summer It’s a heathy ingredient which helps us decrease the cholesterol level and reduce the risk of cancer It also makes us full faster and hence eat less I went to the market this morning and found some fresh lima beans and another type of bean which looks quite cute It’s called Pinto bean We will simmer them with coconut fresh, shiitake mushroom coconut juice and other seasonings The nutty flavor of bean, crunchy texture of coconut and juicy mushroom will make this dish very delicious The nutty flavor of bean, crunchy texture of coconut and juicy mushroom will make this dish very delicious First, cook the beans in boiling water with a little salt for 15 mins until soft Dice the coconut fresh I use both young and old coconut flesh to give more textures to this dish Finely mince some leek julienne some ginger With shiitake mushroom, remove the root and cut into a half or a quarter depending on mushroom size fry the leek until fragrant and add shiitake mushroom Stir well and add 1 tbsp soy sauce Stir well and add 1 tbsp soy sauce Add the cooked beans and coconut fresh add some julienned ginger and mashed fermented bean curd Simmer under low heat for 5-10 mintues until the beans absorb the coconut milk and the sauce turns thick I will use of the remaining half of the coconut as a bowl Sprinkle with some black seasame seeds and our dish is done! Tuna Soup with Pickled Bamboo Shoot is a delicious soup You can serve as a soup or make it saltier to serve with rice or vermicelli The ingredients of this dish includes 4 slices tuna 1 tomato, garlic and some chilli 200g pickled bamboo shoot , salt and pepper, some fish sauce cilantro and Knorr mushroom seasoning powder Rinse and soak the tuna slices in salted water for 10-15 minutes It’s a trick to make tuna look bright after being cooked Peel the garlic and mince finely Cut tomato into wedges, then cut in half Cut chilli in half or slices Cut pickled bamboo shoot into bite-sized pieces Fry garlic until golden brown Add tomato and 1 tbsp of fish sauce Mix well Add pickled bamboo shoot and 2 liters water. Bring to a boil. Season with some salt and sugar When the water comes to a full boil, add 1 slice tuna Wait for it to boil again and add the next slice That helps reduce the fishy smell of tuna Cook for about 10-15 mins Finally, add 1 tsp of Knorr mushroom seasoning powder Don’t forget some chilli to reduce the smell of fish.
