We are going to do four delicious, super nutritious tasty snacks that are 100 calories. All of these snacks come from my new cookbook Jamie’s Everyday Superfood. Full of the good stuff, veggies, protein, dairy, tasty it’s soft. This is a lovely way to address healthy snacks. I’ve got poppadoms here, which is an incredible indian little crisp. It’s made out of dhal, lentils so it’s really good for you, high in protein. You know normally they would fry this in a deep fat fryer. Not so healthy. We’re going to do it in the microwave, you can do it even under the grill if you wanted to. 30 seconds. It’s wicked, it kind of souffles up. It kind of goes all funky. So how do we make this fully nutritious, we want to have some dairy, cottage cheese is one of the lowest fat cheeses you can get. So 1 tablespoon in each little poppadom. and that’s going to be the base for each one of these poppadoms. It’s so healthy, really delicious to eat and to cook with. Finely slice half a chilli Sprinkle over any toasted seeds, and then just a little teaspoon. Really really good for you, there’s some amazing minerals, trace elements and oils in there. Red onion here, just finely slice and then just squeeze a little lemon juice on it. And it’s like a quick pickle. And that my friend is a really lovely little snack. Second one that I do, that I love is much simpler actually. We’re going to use mango chutney love love love a bit of mango chutney. A teaspoon or 2 just in and around. If you get a good mango chutney, you’ve got some spices in there and some herb. Take some coriander and just chop it up or tear it up these are really really simple to put together. and sesame seeds are really really nice. Love a quick pickle. Use any veg you like, do long strokes of carrot in a box grater. Then I’m going to use cucumber, again long strokes it’s so unbelievably quick. Get yourself some vinegar, white wine vinegar, red wine vinegar roughly a teaspoon on there. You need a little soya sauce. Just going scrunch it up with my hands. and we’ll just squeeze the drink out. So tasty, just a few sesame seeds on top. And that is a naughty little snack. But it’s not naughty, happy days! We’re going to do some tomatoes guys, clank them up roughly, Some big, some small. Feed it with a little salt. And some pepper. and a tiny bit of drizzle of balsamic. and then I’m just going to dress it up in my hands like that. The balsamic and the seasoning will just pull the natural flavours out from the tomatoes. Add a little basil, tear those over the top. So so good. And then I like to finish with just a little bit of balsamic on the top. So there you go, 4 beautiful poppadom snacks, 100 calories. Of course we like biscuits, we love them. But if that’s the only go to, we’ve got problems. So it’s nice to mix it up. Good for your body, delicious, soft, crunchy, hot, cold. I love it, I really really really love them.
